| Blanched | Boiling salted water, then ice bath | 2–3 min | Shock in ice water immediately to lock in bright green color before sautéing or grilling. |
| Grilled | Medium-high, direct heat (~400°F) | 6–8 min, turning once | Blanch thick stalks a minute first so centers cook through by the time florets char. |
Peel the tough outer layer off broccoli stalks and slice them thinly so they finish cooking at the same time as the florets.
